This was my mothers favorite cake. She would always request it for her birthday. I felt I could never get the icing just right in terms of sweetness. To me it was always too sweet. I’ll try the Kerrygold next time. She is no longer w us but I want to continue making it at Christmas in her honor. John is adorable.
